- Bitterness is difficult to perceive at high temperature. When the temperature drops to normal temperature, our perception of bitterness is very sensitive.
It is precisely because of different temperatures that we have different perceptions of sweetness and bitterness, so tasting coffee at different temperatures will have different flavor expressions. Therefore, in the cup test, it will be divided into three temperatures: high temperature, medium temperature and low temperature.The high temperature zone is about 50-70℃, and above 70℃ it is actually very hot and difficult to taste the flavor. At high temperature, the main drink is the flavor tonality of coffee, that is, the general flavor trend.
Generally, the medium temperature zone is used for tasting delicate flavor, and the temperature is about 35-50℃. At this temperature, many delicate flavors can be tasted, and it is also a sensitive temperature to perceive sour and sweet taste.
The low temperature zone is about 35℃ to room temperature, and some negative flavors are easy to appear at this temperature, so it is more comprehensive to taste coffee beans when tasting the low temperature zone in the cup test.
